Vintage Recipe: Bird Nest’s Soup

From F.W. McNess’s Cookbook, Bird Nest’s Soup is a recipe from the company’s cookbook, which has a collection of recipes from customers all around the world, including ingredients and instructions in their native languages. Furst-McNess used to be a seller of general kitchen ingredients and household items. Today, they sell nutrition technology for farmers. The Bird Nest’s Soup caught my eye because it is super simple and inexpensive to make. As groceries become pricier, it is helpful to find delicious alternatives.

The original Mandarin version.

Ingredients

  • 2 tablespoonfuls granulated gelatin
  • 4 cups chicken broth
  • 1 egg, slightly beaten
  • 1 teaspoonful lemon juice
  • 1/2 cup fine noodles
  • Salt and pepper to taste

Instructions

  1. Soften gelatin in one-fourth cup cold water, dissolve in hot broth.
  2. Place in a double boiler, add noodles and seasonings and cook until noodles are done.
  3. Add egg and lemon juice just before serving.
